About Casa Vinicola Botter: Founded in 1928 in the Veneto region, 30 kms northeast of Venice, by Carlo Botter, the company began as a small business trading in local Veneto wines in barrels and demijohns. The purchase of a small winery and a few acres of land in Veneto allowed Carlo to start bottling wines from his own estate. Now run by the third generation Bottter family it continues to makes wines from its own vineyards, the 60 hectare organic La Di Motte estate in Veneto and Fruili. Drawing on more than 70 years of winemaking experience the company also vilifies grapes from estates across Italy, from Veneto in the North to Apulia and Sicily in the South, giving it a truly national identity and a large portfolio of very high-quality wines.

Vinification: The peculiarity of this wine, obtained from a blend of Negroamaro and Malvasia Nera, relies in its vinification method which involves the use of millstones during the fermentation process. These ancestral elements had been used in Apulia since the first wine-making experiences, and various archaeological findings attested their presence in the Salento area. They were made of stone and their characteristic shape (low, wide and completely open) allowed a better contact between the must and the skins with respect to the traditional winemaking methods, improving the dissolution of oxygen during the fermentation process. Nowadays, the grapes are vinified inside the “modern” stainless steel millstones, whose shape and characteristics mirror the original ones. The wine obtained, with no oak refining, has a great structure, concentration and a very high persistence; the complete extraction of all the skins parts and the greater dissolution of oxygen during the fermentation process result in more mature tannins, which become less aggressive and more long-lasting.

Description: On the nose, this wine has scents of ripe fruit but also of blackcurrant, blackberry and blueberry. Elegant and balsamic notes of licorice complete its bouquet. As for the palate, this wine shows a great structure thanks to the numerous and perfectly balanced tannins. Vegan friendly.
